The bones of a dinosaur will not just spontaneously decompose due to the second law. It's a bit like saying kicking a football will send it into outer space. There are many other forces present. Gravity in this case, and molecular bonds in the bone.
As for the Job verse, I agree it could only refer to a large herbivorous dinosaur, such as diplodocus. However, no-ones denying the existence of such creatures. The "made with thee" part doesn't have to mean they were created at the same time as man. I certainly don't believe we're meant to conclude there were dinosaurs at the same time as Job.
